Bow Tie Pasta Salad

We made this salad for Chanel Beattie's shower. It's really yummy!

1 10 oz bow tie pasta (cooked and cooled)
1 bag baby spinach leaves
1 red bell pepper, sliced
1/2 C. chopped red onion
1 can black olives drained
1 can mandarin oranges, drained
2-3 seasond/cooked chicken breasts, cubed
1/2 - 1 C. sugared pecans (recipe to follow)

lightly mix all of the ingredients together in a salad bowl.

Poppy seed dressing

1 C olive oil 1 tsp. salt
1/2 C. sugar 1/2 tsp dried tarragon
1/2 C. red wine vinegar 1 tsp mustard
1 1/2 T. minced onion 1 T poppy seeds

Blend ingredients together in a blender or food processor for 2 min. dressing will be thick.

Sugared Pecans

1 C Pecans
1 T. Orange Juice
3 T. Sugar

Heat the juice and sugar in a small frying pan. Add the nuts and stir gently for 2 min until all the sugar and juice is absorbed. Spread on foil on a cookie sheet and bake @ 375 for 8 min.
Remove from foil and place on counter to cool. Break apart and store in plastic bag in the fridge.
